A nutrient rich petso using our Kalahari Vital Blend - dried microgreens

Here’s a simple and flavourful Kalahari Vital Blend Pesto Recipe using your microgreen mix:

Ingredients

  • 20 g fresh Kalahari Vital Blend (or 2 g dried blend + 2 g mayonnaise for texture)

  • 30 g fresh herb baby greens (basil or coriander work beautifully)

  • 30 g roasted sunflower seeds (or pine nuts if preferred)

  • 40 g grated Parmesan cheese

  • 1 clove garlic (optional for extra punch)

  • 60 ml extra virgin olive oil

  • Pinch of coarse salt (your blend already has some, so taste before adding more)

  • Freshly ground black pepper to taste

  • Juice of ½ lemon (for brightness)

Method

  1. Prepare the greens: Wash and pat dry the Kalahari Vital Blend and herb baby greens.

  2. Blend: In a food processor, combine microgreens, herb greens, roasted seeds, Parmesan, and garlic.

  3. Add oil gradually: While blending, slowly drizzle in olive oil until smooth and creamy.

  4. Season: Add lemon juice, salt (if needed), and pepper. Blend briefly to combine.

  5. Taste and adjust: Add more lemon or oil if you prefer a looser texture.

Serving Suggestions

  • Toss with pasta or roasted vegetables.

  • Spread on sandwiches or wraps for a nutrient boost.

  • Use as a dip with crackers or crudités.
