Pea Microgreen Mint Tea

Ingredients (Serves 1):
1 teaspoon dried pea microgreens
1 teaspoon dried mint leaves (or fresh if available)
1 cup boiling water
1 teaspoon lemon juice (optional)
Instructions:
Mix dried pea microgreens and mint in a cup or teapot.
Pour boiling water over and steep for 5 minutes.
Strain and add lemon juice if desired.
Serve warm or chilled over ice.
Benefits: Mild and refreshing, with protein and vitamin K from pea microgreens, aiding bone health.
