Pea Microgreen Mint Tea

  • Ingredients (Serves 1):

    • 1 teaspoon dried pea microgreens

    • 1 teaspoon dried mint leaves (or fresh if available)

    • 1 cup boiling water

    • 1 teaspoon lemon juice (optional)

  • Instructions:

    1. Mix dried pea microgreens and mint in a cup or teapot.

    2. Pour boiling water over and steep for 5 minutes.

    3. Strain and add lemon juice if desired.

    4. Serve warm or chilled over ice.

  • Benefits: Mild and refreshing, with protein and vitamin K from pea microgreens, aiding bone health.

  • Local Tip: Use wild mint if growing naturally near your Kalahari location.


Preparation Notes

  • Drying: Ensure microgreens are fully dried (e.g., using a dehydrator at 40-50°C) to avoid mold, especially in the Kalahari’s variable humidity.

  • Storage: Keep dried microgreens in airtight containers to maintain potency.

  • Scaling: Double or triple quantities for larger batches, adjusting steeping or blending times as needed.
